Wildharvest Update:
Black raspberries, June berries (Service berries), Elderflowers, and greens like Plantain,
Dandelion and Chickweed are still good due to weather. Last gathering of mint family such as
Motherwort, Catnip, Peppermint, Spearmint and Lemon Balm-once they bloom it's best to wait for
late summer and new leaf growth before harvesting again.

Recipe of the Week:
Radish & White Bean Salad
Adapted from “A Year in a Vegetarian Kitchen”-Jack Bishop
1 bunch radishes (1#), trimmed & sliced thinly
1 15oz cans white beans (cannelini), drained & rinsed
8 cherry tomatoes, halved (or substitute sun-dried tomatoes)
8 kalamata olives, pitted & chopped
2 tsp capers, drained (or pickled nasturtium buds)
1 TBSP mint(spearmint) or parsley, minced
2 TBSP extra-virgin olive oil
1 TBSP fresh lemon juice
Sea Salt
4 cups mixed baby greens/lettuces
1. Stir the radishes, beans, tomatoes, olives, capers and mint together in a medium bowl. Drizzle
the olive oil and lemon juice over and toss to combine. Add salt to taste. Cover and let set up to
one hour.
2. Divide the greens among four large plates and place the radish salad over each portion. Serve
with bruschette or flat bread.
Health Notes:
Water Wisdom-Dehydration is one of the major underlying causes of much ill health in our society
today. Many health benefits can be realized through simply consuming the proper amount of
pure water each day. The rule of thumb that’s most popular is 8 “glasses” (64 ounces) per day.
There is a more scientific calculation though, that allows you to determine how much is right for
you. Take your bodyweight and divide it by 2. This will equal the number of ounces per day that
will best benefit you. For example: a 120# person’s consumption should be in the 60 ounce/day
(7.5 “glasses”) range. A 220# person however would realize maximum benefit from consuming
110 ounces/day (13.75 “glasses”)! This calculation applies to children as well. Liquids such as
coffee, juice and soda should not be factored into the daily totals, however if you consume a large
amount of juicy fresh fruits and vegetables, healthful soups like miso, or herbal tea like
"Femineral Herbal Infusion" then you can probably scale back on your water intake.
